Many years ago in a tropical land far far away...

Esteban Taco was born to Miguel and Teresa Taco in a rural village in the tropics of Mexico. Miguel was a matador and, as you can imagine, had a relatively short life. Sadly, when Esteban was only nine, his father Miguel was trampled by a fierce bull. Miguel had been escorting the village doctor on a tour of the bull-fighting ranch when a crazed bull broke out of his cage and began to charge Miguel and the doctor. Miguel understood that the village needed a doctor more than a matador. He died valiantly that day while protecting the village doctor from any harm.

The doctor was a lovely gentleman who had much compassion for the Taco's situation. He began to support the Taco family and also took Esteban under his wing to work in his small clinic.

Over the years, Esteban became very knowledgeable about caring for patients, and the doctor taught him very special herbal and natural remedies that had been handed down for many generations. The doctor also taught Esteban that the way we live our life and the food we eat is a major factor in our health.

The kind doctor also taught Esteban the value of loving life and the joys of life.

"Joie de vivre” is what the doctor called it.

He had worked as a waiter in a French restaurant in Mexico City to pay his way through medical school. At the French restaurant, the doctor was taken under the wing of world-famous chef Remy Gaston. Remy taught the doctor how to be a gracious gentleman, how to cook healthy and savory food, and how to live the “Joie de vivre.” Much the same way that Remy took the doctor on as a protégé, the doctor took Esteban on as a student.

Esteban never went to medical school, but he knew more than most doctors ever did. With his special knowledge of healthy food, elixirs, and herbal remedies, his healing powers were greater than most doctors who had been to the finest of medical schools. One day, the lovely old doctor passed away, and Esteban was faced with a major decision. Should he continue running the clinic as a healer, or should he go to medical school?

On a daily basis, the villagers began to come to the small clinic and they began asking the question,

"Will you be our doctor, Taco?"

Esteban smiled, thinking of how "Doctor" and "Taco" had a nice ring to it. He had a very hard decision to make, and it was only through a peyote-induced dream that he had the vision to continue healing with elixirs and health food.

This was to be the humble beginning of Doctor Taco. Because Esteban had never learned to drive (the doctor had always done the driving and house calls), he purchased a small yellow scooter-truck. It was easy to drive, inexpensive on petrol, and could squeeze up the small side streets in the village. These small scooter-trucks are still used today to deliver The Doctor's savory food and special elixirs.
